This year has been the year of learning to cook! It’s so tempting to eat out and order in when living in NYC that this year I’ve made a conscious effort to at least cook 3-4 meals per week. I really feel a difference now that I’m more aware of what I’m putting in my body! If you’re a novice in the kitchen like me, check out Jessica Seinfeld’s “Can’t Cook” cookbook – there are so many simple, delicious recipes in there for breakfast, lunch & dinner. And if I can do it, you can too!

Breakfast
If I have time before my first session of the day I will always have scrambled eggs with sautéed onion, tomato and basil. So easy, quick and delicious! I love starting the day with lots of protein before I teach. I also have one cup of coffee to get me going… I am quite sensitive to caffeine so I make sure I don’t have any past 10am if possible!

Snacks – mid morning & mid afternoon
I need to make sure I still have as much energy for my 4th and 5th session of the day as I do for my first, so I am constantly snacking! I have a banana every morning without fail, mostly because I love them but they are also an incredible source of fiber and potassium, which helps prevent muscle cramps.

I also have a greek yoghurt most days… I love to mix in a little amount of honey, cinnamon or sliced almonds to add flavor.

I am currently obsessed with the new Maple Glazed Pecan & Sea Salt KIND bars. They are super sweet and delicious (I have a big sweet tooth) with only 5g of sugar per bar.

Lunch
I’m not a big salad eater, but I discovered one at Westside Market that I absolutely LOVE at the start of the summer and have been creating a big batch of it every week since: Blanched kale, Roasted butternut squash, sautéed onions & cranberries tossed together. Dinner
A few of the BBS NYC girls are learning to cook and totally obsessed with Blue Apron! Fresh, pre-portioned ingredients are delivered directly to your door (for free!) and the meals are varied and delicious! If I have opted out of Blue Apron for the week I will usually grill a piece of chicken or salmon and serve it with 2/3 vegetables. At the moment I’m loving sweet potatoes, green beans with almonds and roasted lemon asparagus.

Sweet Treat
I absolutely love ice cream and can’t go without it! I will usually buy the little mini single serve tubs as if I buy a whole pint I can’t stop! I LOVE Ben & Jerrys chocolate fudge brownie, however Edy’s Slow Churned Mint Chocolate Chip is my ‘healthier’ choice as it has half the fat of regular ice cream.
